My Green Goddess Soup

Serves 4-6.

Include your daily greens easily with this awesome soup!

This vegetable soup is packed with many water soluble vitamins as well as dietary fibre and a range of minerals. It helps to regulate the digestive tract and helps you to include in your day alkalising greens like kale, broccoli, zucchini, green beans, coriander and parsley.  You can substitute any green vegetables/herbs for others you have in the fridge or that you prefer to use.

Ingredients

355 ml of water

1 red onion, chopped

2 cloves of garlic, finely chopped

1/4 cup broccoli, finely chopped

1/4 cup green beans, finely chopped

1/4 cup zucchini, finely chopped

1/4 cup kale, finely chopped

2 tbsp parsley, finely chopped

2 tbsp coriander, finely chopped

1 tbsp of olive oil

Salt & pepper to season

Method

  1. Sautee the onion in a saucepan with the olive oil on medium heat for 2-3minutes. Then add the garlic to the pan and stir.

  2. Add all the chopped vegetables to the saucepan and give it a stir; leave for 1-2 minutes

  3. Add the water and allow to simmer for 7-10 minutes until the vegetables are soft and well cooked

  4. Add the soup to a high-speed blender and blend until smooth.

  5. Serve and garnish with the fresh parsley and cilantro.
